Mincemeat Cookies
  • 2/3 cup shortening
  • 1/3 cup unsalted butter
  • 1 1/2 cups sugar
  • 3 large eggs
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
    3 cups mincemeat
  • 1 cup chopped nuts -- optional

Preheat oven to 375F

Line with parchment paper or grease cookie sheets

Cream together the shortening, butter and sugar in a mixer

Add the eggs separately, mixing until uniform after each addition

Mix together the flour, salt and baking soda; stir into the creamed
shortening/butter.

When the flour is almost mixed in add the mincemeat and nuts

Drop onto the cookie sheets about 2" apart ( I used a #50 scoop about 1
1/2 Tablespoons

Bake for 8- 10 minutes until lightly brown ( I tried 400F but found in our
ovens the bottoms were browning too quickly, use your judgment)

Yield:
"7 dozen"
