Salmon Burgers with Dill Tartar Sauce

Dill Tartar Sauce

  • 1 medium/ small Dill Pickle -- Coarsely chopped
  • 2 Tablespoons Dill Relish
  • 1/2 Tablespoon Lemon Juice
  • 1/2 Tablespoon Fresh Dill -- Chopped
  • 1/2 cup Mayonnaise

Salmon Burgers

  • 1 pound Fresh Salmon fillet
  • 2 Green Onions
  • 1 teaspoon Lemon zest
  • 1/3 cup Panko Crumbs
  • 3/4 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 Tablespoon Fresh Dill -- Chopped

For assembly

  • 4 Good Quality Burger Buns
  • Baby Spinach
  • Onions & Tomato Optional as garnish

First make the tartar sauce:

Chop the pickle and mix with the mayonnaise. Add the chopped dill, lemon juice, and relish. Let sit refrigerated while you prepare the burgers. (This can be made ahead of time if desired)

Make the burger mixture:

Remove the skin from the salmon. and coarsely chop the flesh into 1" cubes

Put the dill into a food processor along with the lemon zest, salt & pepper, pulse until the salmon is coarsely ground. Add the green onions and panko, pulse until ground like ground beef. Do not overprocess.

Form the mixture into 4 burger sized patties. Grill for 3 - 5 minutes per side depending on grill heat.

To assemble the burgers:

Place stemmed baby spinach on the bottom of the roll, place the burger on top and spread 1 tablespoon of the tartar sauce. Add any optional toppings and serve
