There's no question that we're in a Tastebud Revolution! Never before have people been as vocal about what their food should taste like, look like and which ingredients can and cannot be included. The connectivity of consumers is undeniable and while the shift in consumers’ demands can be exciting, it can also be downright concerning! How do we balance what consumers ask for and what is viable for our companies? The voice of the consumer continues to strengthen and the tastebud revolution is here to stay, so it's time we face and embrace it head-on, together!

We are thrilled to have PepsiCo’s Marissa Jarratt on board to direct us towards answers. Famous for the Lay’s ‘Do Us a Flavor’ contest, PepsiCo understands the tastebud revolution. As Senior Director of Marketing for PepsiCo’s Global Premium Snacks Portfolio, Marissa has led her teams to pipeline innovation success for some of the largest brand names in snacking. Join us as Marissa shares the challenges and opportunities of creating relevance with this outspoken consumer. She will explore current consumer and competitive landscapes to help identify the major trends and behaviors driving the food and beverage revolution. From the rise in foodie culture and increases in global trend awareness, to the ‘real food’ movement, Marissa explains how marketing tactics, like the importance of storytelling and involving consumers can help accelerate your next big idea. Furthermore, Marissa will use real life examples and scenarios to walk us through the implications for our companies. Bio / Work History

Marissa is the Senior Director of Global Premium Snacks at PepsiCo. In her role, she develops and oversees implementation of the growth strategy and plans for PepsiCo’s $1.5B global premium snacks portfolio of brands.

Marissa has held several marketing roles of increasing responsibility at PepsiCo, from building global marketing capability to leading brand innovation at Frito-Lay North America, to driving shopper marketing with emerging channels and established retailers, to managing iconic brands like Lay’s, Cheetos and Rold Gold.

She has been recognized for her work in 2014 as Brand Innovator “40 Under 40,” in 2011 as Frito-Lay’s “Marketer of the Year” and in 2009 with the Gold Ogilvy Award for excellence in strategic advertising.

Prior to business school, she worked in finance for Nortel Networks and was an entrepreneur. She received her BBA in Finance, BA in Spanish and MBA in Marketing from The University of Texas at Austin.

Marissa is married to Jon. They have a 4 year old son, Henry, and live in Plano, Texas.

The Innovation Roadshow gives our talented staff the opportunity to explore new concepts, conduct research or work outside of their area of expertise. By doing so, they have the opportunity to take a 360 degree approach to identifying and truly developing an innovative concept of their own.

Guidelines for Formulating Clean Label Flavors

One of the largest challenges facing food and beverage manufacturers today is the Clean Label trend.  Part of the challenge is that there is no universal definition of Clean Label, and many organizations are struggling to develop their own view and approach.  This includes how best to develop products with desired claims such as "Natural Flavor", "Organic", "non-GMO", "Kosher" and many others. 

In this presentation, Senior Flavorist Paul Ricciardi explains the range of formulation options available for meeting specific Clean Label claims.  The range of options covered, and used by David Michael & Co. when developing flavors, are flexible and adaptable to meet your specific Clean Label objectives.

Consumers and Clean Labels: The When, What and Why of Food Choices

Clean Label is a dynamic trend that reflects the consumer's ever-growing desire for healthy, natural products and ingredients.  Consumers often use a complex and evolving system of cues to inform and validate their purchase decisions of clean label products.  Such cues include familiar on-pack claims such as "Organic" and "Natural Flavors", but also include other less obvious considerations.  A given consumer may even use different criteria for various product categories and purchase occasions. 

Sensory & Flavor Insights Manager Jennifer Elgrim, Ph.D., reviews  attitude and usage studies conducted at David Michael & Co. to "decode" how consumers define, interpret and apply product cues when purchasing clean label products. Jennifer also reveals the differences and similarities of cues identified across consumer segments and product categories.
